Final Report


Course: HCD2304 (Section 2) - FOOD INNOVATION AND DESIGN

Acknowledgement
We would like to thank Chef Zaid for the lesson that he thought us in this subject. he also gave us his patience and guidance throughout this lesson. 


Introduction
Fruit nuggets are a combination from different mix fruit and made to the shape before fry in a pan.For this product we will blend some tropical fruit and then shape it to different shape to attract customers.

Objective 
The main objective for this dish is to let vegetarian to have an alternative snack to consume. There is a less selection of vegetarian snack in the market to let them choose from. So we hope this can let them have a choice.

Activity
We try different fruit as the core for the nugget. For the first week we use apple, and banana for week 2. As foe the week 3 we use guava and mix dry fruit for week 4.

The Body
After all the experiment we did, we choose the last experiment for our presentation which is the mix dry fruit. we will have random 10 people in our campus to try and give comment on the comment sheet that we prepare.

Before the Event
We prepared the fruit nugget like experiment 4 and then fry it in the kitchen before we have people to taste our product.

During the Event
We went around the campus and have 10 people to have a taste and then comment it on the comment sheet. Most of them are satisfied with it.

After the Event

After the event, we clean up the kitchen. Then Chef Zaid comment

on our performances. we are satisfied  with the result of the Fruit 

Nuggets.


Problem Faced 
The problem that our group faces are we do not how much flour we should need to make the flour. But after we add some corn flour to it, it came out just nice to mix with the mix dry fruit.

Recommendation
We would recommend that this product can add some green apples into it so that it would have more taste to the Fruit Nuggets.

Conclusion
Throughout this event lesson with Chef Zaid we learn a lot about food innovation and we are happy that we can create a snack for the vegetarian to choose from.

Fruit Nugget ( Experiment 4 )


Assalamualaikum guys this week we use dry fruit in our fruit nugget..

Ingredients:
250 gm of mix dry fruits
400gm All Purpose Flour
200gm Corn Flour
60ml Water
1 Cup of Oil
600gm of Bread Crumb
3nos of Eggs
A pinch of Salt and Sugar
1/8 tsp of Peppermint Flavor
100gm of Dark Chocolate
50ml Fresh Milk

Method:
  • Mix 200gm of all purpose and 200gm corn flour with 60ml of water.Make it to a sticky form.Add some water if it still not sticky form. After the sticky form is made add in the mix dry fruits.
  • Then add in pinch of salt,sugar and peppermint.Add some more salt and sugar if desired.
  • Shape the nugget by using a mold,then dip it in flour and then in the egg and lastly to the bread crumb.
  • Fry the nugget in the slow heated oil and served while it is hot.
  • To prepare the sauce, by using double boiler method melt the dark chocolate and add in some fresh milk.
  • Lastly serve it together.


Blend dry fruit with sugar and a pinch of salt


After blend put into the bold


Put all- purpose flour into the mixture


Put a little bit of corn flour


Shape it by using love mold

Fruit Nugget ( Experiment 3 )


Hi guys for third week we try to use a guava for the nugget.

Ingredient :
3nos of Guava
A Pinch of Sugar
400gm All Purpose Flour
200gm Corn Flour
60ml Water
1 Cup of Oil
600gm of Bread Crumb
3nos of Eggs

Method :
  • Peel the skin of guava and dispose the seeds. Cut the guava into a small pieces.
  • By using the food processor, blend the peeled guava and add the sugar.
  • After that,separated the juice and the crumbs.
  • Take the crumbs and mix together with flour and sugar. Add the sugar if needed.
  •  Shape the nugget by using the mold and dip it in flour and eggs together with bread crumbs.
  • Fry the nugget with slow fire to get a good texture and until the color become golden brown.
  • For the sauce,by using the pan,take the juice and little bit guava crumbs,put the sugar and cooked until their become smooth and sticky.

Peel the guava fruit 


After peeled, cut the guava and blend it. Put some salt and sugar


Strain the guava after blend it. Separate the juice


Put the blend guava into the bold


Then put some all-purpose flour and corn flour


Mix it until it become a dough 


Shape it by using star mold

Fruit Nugget ( Experiment 2 )


THIS WEEK WE TRY TO CHANGE THE FRUIT WE USE BANANA




Hi guys today is the second experiment for fruit nugget from us.Every week we try to use different fruit to get new taste.This week we try to add a sauce to eat with the fruit nugget.

INGREDIENT:
4 Pieces of Banana
60ml of Water
400gm All Purpose Flour
200gm Corn Flour
A Pinch of Salt and Sugar
1 Cup of Oil
600gm of Bread Crumb
3nos of Egg
100gm of Dark Chocolate
50ml Fresh Milk
1/8 tsp of Peppermint Flavor

METHOD:
  • By using the food processor, blend the peeled banana.
  • Mix 200gm of all purpose and 200gm corn flour with 60ml of water.Make it sticky form.Add some water if it still not sticky form.
  • Mix together with the flour mixture and then add in pinch of salt,sugar and peppermint.Add some more salt and sugar if desired.
  • Shape the nugget by using a mold,then dip it in flour and then in the egg and lastly to the bread crumb.
  • Fry the nugget in the slow heated oil and served while it is hot.
  • And for the sauce double boiled the dark chocolate and put the fresh milk.
  • Lastly serve it.

Put the blend mixture into the bold


Put all- purpose flour into the mixture


Put a little bit of corn flour to make the mixture thickens


Mix all together 


Shape the nugget by using a circle mold

Fruit Nugget ( Experiment 1 )

  



Hi guys, today is the first experiment for the fruit nugget. we are trying to find for the perfect taste for the fruit nugget..


OBJECTIVE:-


  • So that there is an alternative dish to enjoy.

Ingredients;
3 pieces of Green Apple
800 gm of Flour
60 ml of Water
A pinch of Salt and Sugar
1 cup of Oil
600 gm of Bread Crumb 
3 nos of Egg
A Pinch of powdered Cinnamon

Method;
  • By using the food processor, blend the peeled apple. 
  • Mix 400 gm of flour with 60 ml of water and make it to a sticky form. Add some water if it still not sticky form.
  • Squeeze the juice from the apple to get the dry flesh of the apple.
  • Mix together with the flour mixture and then add in a pinch of salt and sugar. Add some more salt and sugar if desired.
  • Shape the nugget by using a mold, then dip it in flour and then in the egg and lastly to the bread crumb. 
  • Fry the nuggets in the heated oil and served while it is hot.

Put salt, sugar and cinamon and blend with food processor



Put all- purpose flour into the bold and add sugar


Put a pich of salt into the flour


Then put a little bit of corn flour


Pour some apple juice for flavor and mix all together


After mix well put apple pie filling and stir again until all mix together


Then shape with a suitable mold
